Sweet Potato, Quinoa and Teff Flour Pizza

A great alternative to your normal pizza, with a good combination of carbohydrates, protein and fats

Ingredients

For the Base

120g Sweet Potato -Boiled

120g Egg Whites

35g Quinoa Flour

25g Teff Flour

6g Ground Flaxseed

Salt and Pepper

Topping

Use your Favourite Ingredients

We used

Passata thinly spread on the base

 

200g Turkey Breast

1/2 Red and Orange Pepper

1/2 Courgette

30g Feta

Handful of Coriander Leaves

Method

In a blender or Nutri Ninja Bullet(which i used) blend all of the base ingredients it will form a batter not a dough

Pour the batter onto a baking tray and spread thinly (4mm)

Bake in the oven for 15 minutes on 175 degrees until the base is fairly set and cooked

Remove from the oven add your topping and place under a grill for 5-10 minutes until the it is cooked and lighty golden and crispy

Enjoy with a green salad with a dressing of olive oil lime juice and black pepper
